Ingredients
1 lb cooked, shredded chicken (rotisserie or slow-cooked)
¾ cup Hill’s BBQ Sauce (plus extra for topping and dipping)
2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
4 large flour tortillas
2 tablespoons butter or cooking oil
½ cup diced red onion (optional)
¼ cup chopped fresh cilantro (optional)
Sour cream, sliced jalapeños, or avocado for garnish (optional)
Preparation
1. Prepare the Chicken
In a skillet over medium heat, add shredded chicken and ½ cup of Hill’s BBQ Sauce.
Stir until the chicken is evenly coated and heated through, about 5–7 minutes.
Remove from heat and set aside.
2. Assemble the Quesadillas
Heat a large skillet or griddle over medium heat and lightly grease with butter or oil.
Place one tortilla in the pan and sprinkle ¼ cup of cheese evenly over half.
Add a layer of BBQ chicken, a small handful of diced onion and cilantro if using, then top with another ¼ cup of cheese.
Fold the tortilla in half and press gently.
3. Cook Until Golden and Crispy
Cook each quesadilla for 2–3 minutes per side, until golden brown and the cheese is fully melted.
Remove from heat and slice into wedges.
4. Finish with Hill’s BBQ Sauce
Drizzle warm quesadilla slices with Hill’s BBQ Sauce for that perfect zesty kick.
Serve with sour cream, sliced jalapeños, or avocado on the side.
